Founded in 1860 in Aÿ, Champagne Ayala is one of the region's historic houses and has been owned by the Bollinger family group since 2005. The house is known for a fresh, precise, Chardonnay-focused style with low dosage, and its Brut Nature takes that philosophy all the way: no sugar is added at disgorgement. The result is a bone-dry, crystalline Champagne showing citrus, green apple, white flowers and chalky minerality, with fine bubbles and a clean, saline finish.
