Maison Champy, founded in Beaune in 1720, is regarded as the oldest wine house in Burgundy, and its grand cru range includes this Bonnes-Mares. The grand cru straddles Chambolle-Musigny and Morey-Saint-Denis and is known for wines that pair Chambolle's perfume with a firmer, more muscular frame. The 1996 vintage was shaped by a cool, sunny, dry late summer with persistent north winds, producing Pinot Noir with notably high acidity and good concentration that has proven slow to evolve. Three decades on, expect a fully mature wine with dried cherry, forest floor, leather, spice and savory earth. Drink now, carefully decanted, while its tertiary complexity is at its peak.
